Join The Movement

Want to do something good for yourself and for the planet? Join the Meatless Monday movement – it’s the pledge to cut out meat one day a week. What started as a campaign put forth by the U.S. Food Administration during World War I to help ration food for the Armed Forces has recently become a global movement to promote healthier eating and a “greener” lifestyle. Going meatless once a week is said to reduce your risk of cancer, cardiovascular disease, diabetes and obesity and also preserves important natural resources likes fresh water and fossil fuel.

Going meatless might be easier than you think – especially if you’re a fan of our $3 Burger Mondays. Because you can, in fact, substitute any burger on our menu for a veggie patty. So join the movement! From a basic Elementary Burger to the Black and Bleu Burger, you can do some good for your body, the environment and your wallet! Now that’s a great way to start off the week.

Drunken Grilled Cheese

Because it’s National Grilled Cheese Day, and because it’s Friday, we’d like to share with you this drool-worthy recipe for Drunken Grilled Cheese.

Drunken Grilled Cheese
Yield: 2 sandwiches

Ingredients
1 tbsp. olive oil
1 small onion, sliced
¼ cup lager
4 slices bread
2/3 cup shredded Sharp Cheddar cheese
1 tbsp. butter
Salt and pepper to taste

Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add onion and cook 10 minutes or until softened and beginning to turn golden brown.
3. Add lager, salt and pepper to skillet and increase heat to medium-high. Cook 5 more minutes, stirring frequently, until the liquid is absorbed. Remove from heat.
4. Divide onions onto two slices of bread and top with cheese and remaining bread slices. Butter bread on each side. Cook on medium-high heat until browned, about 3-5 minutes on each side.

Class is In Session!

With the craft beer craze in full swing, everyone seems to be an expert on the subject. If you’re a little behind on your studies, check out this quick list of beer terms to help you get up-to-speed. Want a more in-depth lesson? Study up here.

Ale – Beer brewed with top-fermenting yeast. Typically brewed and served at warmer temperatures and characterized by a more intense flavor profile.

Lager – Beer brewed with bottom-fermenting yeast. Brewed and served at cooler temperatures and characterized by a lighter flavor profile and mouthfeel.

Hefe – A German word for “yeast”, most often seen paired with –“weisse,” meaning that the beer is bottled with the yeast in suspension (unfiltered). The result is a cloudy and refreshing beer, or a hefe-weizen. Blue Moon, for example.

Mouthfeel – The consistency or viscosity of a beer. For example, a beer might have a thin or a full mouthfeel.

Pub – An establishment that serves beer and often wine and other spirits. This term originated from the English “Public House” which referred to an establishment open-to-the-public that served beer for consumption.

Publican – A pub owner or manager.

Brewpub – A pub that brews its own beer and sells at least 50% on-premises.

Brewhouse – The collective equipment used to brew beer.

Reinheitsgebot – Also known as the “German Purity Law,” this law dates back 1516 and applies to all German brewers making beer for consumption in Germany, stating that brewers may only use malted grain, hops, yeast and water in their brews. Still popular today and followed by many brewers worldwide.

Krug – A beer glass with a handle. Typically very thick and heavy. Also called a mug.

Goblet – A stemmed drinking vessel resembling a fish bowl, most often used for sipping high-alcohol beers.

Batter Up!

Are there any aspiring chefs among you beer aficionados? Try this recipe for Beer-Battered Buttermilk Fried Chicken. It’s no secret that fried chicken and beer go hand-in-hand, and the garlic and cayenne add just the right amount of kick.Enjoy.

Beer-Battered Buttermilk Fried Chicken

Ingredients:

Buttermilk Soak
3 cups buttermilk
2 tbsp. kosher salt
1 tbsp. freshly ground black pepper
2 tsp. cayenne pepper
4 lbs medium chicken wings, thighs and drumsticks


Beer Batter

2 cups all-purpose flour
2 tsp. onion powder
2 tsp. garlic powder
2 tsp. cayenne pepper
2 tsp. kosher salt
2 tsp. freshly ground black pepper
18 oz. crisp peer (lager or pilsner)
Vegetable oil, for frying

Instructions:

1. In a large bowl, combine the buttermilk with the salt, black pepper & cayenne. Add the chicken and turn to coat. Let stand at room temperature for 2 hours, or refrigerate for 4 hours.

2. In a large bowl, whisk the flour with the onion powder, garlic powder, cayenne, salt & black pepper. Whisk in the beer to make a thin batter.

3. Drain the chicken and thoroughly pat dry with paper towels. Transfer the chicken to the batter, turning to coat.

4. In a large, deep skillet, heat 1 inch of oil to 350 degrees. Set a rack over a baking sheet and line the rack with paper towels. Lift the chicken from the bowl, letting the excess batter drip back into the bowl. Fry the chicken in batches at 315 degrees, turning once, until golden – this takes about 18 minutes for wings and 20 minutes for thighs, breasts and drumsticks.

5. Transfer the fried chicken to the rack and let stand for 5 minutes before serving.
